Executive Sous Chef

Step into a dynamic leadership role at Sun Peaks Resort as the Executive Sous Chef, where you will be instrumental in shaping unforgettable culinary experiences at one of Canada’s premier mountain destinations. Working in close collaboration with the Director of Culinary, you will oversee the operations of our diverse F&B outlets—ranging from vibrant restaurants and cozy pubs to high-end banquet and conference services. In this exciting role, you will lead and inspire a talented culinary team and play a key part in menu innovation, event execution, and driving the highest standards in food quality and service. Compensation Information:

$80,000 per annum

Physical Requirement:

Heavy, work activities involve handling loads more than 20 kg. Predominantly in an indoor setting.

This job position requires physical presence at the designated location.

Accountabilities:

  • Coordination and Oversight: Works closely with the Director of Culinary to manage operations and staff for F&B outlets (e.g., restaurants, pubs, conference services), focusing on Banquets and Conference Services.
  • Menu Development and Purchasing: Develop menus and buying plans tailored to each outlet's target markets and current trends. Ensures menus align with financial budgets, kitchen equipment, and staff capabilities.
  • Financial Input: Provides inputs on sales, operational, and capital budgets specific to the Back of House.
  • Event Planning and Execution: Assists in preparing menus for catering and special events, ensuring they fit within budgets and operational constraints.
  • Kitchen Safety and Hygiene: Ensures that the kitchen environment is safe and sanitary and that food is prepared in accordance with health and safety standards.
  • Food Quality and Speed: Helps ensure timely and high-quality food preparation and delivery. Monitors the preparation of dietary and allergy-specific requests, ensuring allergen guidelines are strictly followed.
  • Customer Service and Feedback: Operates with a high level of customer service, listening to and acting on feedback regarding food and beverage operations.
  • Daily Briefings: Ensures the leadership team conducts daily briefings with the Culinary Team and front-of-house managers to align on service goals and updates.
  • Performance Monitoring and Feedback: Monitors staff performance through supervision and service quality audits, offering feedback and recognition.
  • Fostering Trust and Collaboration: Builds an environment of mutual trust, respect, and cooperation among team members and across departments.
  • Operational Leadership Collaboration: Contributes to the hotel’s broader operational leadership team to achieve overall hotel goals.
  • New Hire Onboarding and Training: Works with the Director of Culinary to oversee the onboarding process, ensuring that new hires are properly assimilated into the department.
  • Ongoing Development: Identifies ongoing training needs for team members, providing coaching, mentoring, and necessary resources to improve performance.
  • Performance Evaluations: Conduct annual performance reviews for all team members.
  • Supplier Agreements: Assists in reviewing and managing supplier contracts annually, working closely with the Director of Culinary.
  • Supplier Performance: Monitors supplier performance and contributes to regular evaluations to ensure quality and cost-effectiveness.

Ideal Candidate:

  • Minimum 8 years experience in a similar position
  • Journeyman Red Seal or equivalent experience
  • Food Safe Certificate
  • Demonstrated strong practical and technical skills in all aspects of food service and kitchen management
  • Demonstrated strong practical skills in cost controls and management
  • Passionate about the food industry
  • Experience in multi-outlet operations is an asset
  • Strong leadership and motivational skills with the ability to supervise staff and prioritize assignments
  • A level of financial acumen and ability to budget, forecast, and interpret financial statements
